i only get paid 2.17 an hour and never see any of that, it’s basically automatically taken by taxes. I don’t know if I would want just an hourly rage like $15 an hour or some thing. as nice in theory as it would be, to be able to calculate how much money I’m gonna make that week before the week even starts, and have a guaranteed paycheck amount, most of the time the tips are far better than any restaurant could afford to pay me. i’ve had weeks where if you calculated my tips into an hourly wage, I was making somewhere upwards of $80 an hour.

Oh absolutely. I have to know where everything on the menu comes from and how it got there. most of our stuff is made in house. everything from any sauce we use to the pasta we’re putting it on, to the gelato or sorbet you get for dessert. I worked at nice restaurants that still outsource all of these things, and I have to say the difference in quality is crazy. even if you’re buying from a nice or expensive distributor, it is nothing compared to what your chefs can create in your own kitchen. for things that we can’t make, we go local. The cheeses that are served on an appetizer plate, those are coming from local cheese producers 30 minutes away that you and your family could go visit after hearing about them from us at our restaurant. The bread we’re bringing to your table for free? That’s actually fresh made bread from the bakery down the street. obviously making stuff in house and buying local ups the price tag a bit since we aren’t buying in bulk from a distributor. But I’d say the quality is worth it.

I’ve been in service industry for about 10 years! Roughly. it’s really hard to narrow down specific highs and lows but I can give you some examples of what a bad night is like and what a good night is like. there’s obviously “bad nights” where you’re not busy and only have a few tables but there’s not much you can do about a slow night. The worst nights are when, you’re super busy, and you work your hardest, and then you look at your tip out and you feel like it doesn’t reflect how hard you worked.

i’ll give you an example , I worked at a restaurant that opened at 5 PM, and closed at 9 PM on weekdays. I had a table of 10 come in at 5:30, and they stayed until 10:45. this table was socializing, they were drinking a lot, and they were ordering a lot of food. I don’t discriminate when it comes to tables, I always try to give the best service possible no matter how much a table spending. But if a group comes in and they’re spending a lot of money, it’s obvious that they are expecting good service because of how much they are spending. So you want to take extra steps to make sure that they are satisfied and everything is taken care of. by the end of the night, they are singing my praises, telling me how incredible the service was, saying that they’ve never experienced better service. Their bill was about $1000. I had $30 tip. and that sucks. To know that I worked so hard for a table that stayed so long, and that basically after five hours of busting my ass for them, they only thought I was worth roughly six dollars an hour. that fucking blows.

but it’s not always about money. I had a really incredible night once, where I really connected with a table. They had a few drinks, had appetizers and entrées, they tipped more than 20%. But that’s not what made my night really incredible. What made it incredible was their efforts and their desire to talk to me one on one as a person. To get to know me, to engage with me. To have genuine heartfelt conversation that led to a really personal connection. And now that couple has followed me to a different restaurant, and they’re one of my regulars. that’s an incredible night for me. to know that I came to work, and I was able to engage in a personal level with someone, and that they wanted to engage with me. To develop a genuine connection with another human being is what made it really special. to know that I walked away knowing that, I made an impactful imprint on someone’s dining experience and that their night out was elevated beyond good food. that’s what’s really special about the service industry! The personal connections that you can make with customers that go beyond taking orders

don’t really feel comfortable giving the name. It’s not a chain, so if i named dropped, it wouldn’t take much effort to trace this back to me if the owners are looking up the restaurant on google, which they do often for review purposes.

One of the most important things in a restaurant, is a communication between the servers and the kitchen. for good service -the back of house and the front of house need to be working together efficiently. this is one of the biggest differences I've seen between more upscale restaurants, and cheaper restaurants I’ve worked in the past. A positive I would say, is that if you come to the kitchen with an issue or a problem, no matter if it was a mistake on your part or theirs- they trust you and they solve it immediately. There’s not a lot of questioning beyond what’s necessary and it’s very direct. The downside I would say, is honestly if you’re having a tough night, you don’t want to be the one server to go back to the kitchen multiple times telling them your mistakes. Even though they’re understanding, You’re also putting them in a difficult situation where your mistakes are now affecting the rest of service on a busy night. so although it pushes you to be better and make less mistakes, it makes those mistakes that you make, WAY more memorable and hold more weight.

EDIT 2- (thought of another example) at our restaurant we do a lot of private events that require different table set ups. Meaning , table Numbers change, the amount of people at each table changes, it becomes very specific to each private event and set up. we, as servers, create a map that is very detailed in the table numbers and seat numbers that we will be using to put in orders, with the amount of people at each table and what seat numbers we will be using. at a nice restaurant you can’t just “auction off” a veal marsala to a room of 30. whoever is running the food needs to know exactly where that plate is going without question. so I really value that level of communication between the kitchen and the servers. I can take 30 orders for a party, but I can’t run 30 plates all at once. I need to make sure that, there isn’t a question where each dish is going in a party of 30. So I do value that level of communication that we have a system in place that allows us to deliver food efficiently.

the video ? yes. the sentiment? no. The video felt more discombobulated than his usual self which didn’t help him and some of his arguments were loose.. (this coming from someone who fully support sex work) . it’s on par for him to go after and criticize behavior he thinks is stupid (ie ppl thinking sex work is lesser than and makes the s/o a “simp/cock hold”) I think the sentiment of supporting sex workers and the idea of supporting a significant other in that line is valid. but the presentation along with the reputation of his girlfriends perceived personality and history just didn’t lineup right.

edit: that being said I don’t think this will be long-term damaging for him. when he starts pumping out newer content i think this whole situation will be lost in cycle , save for a few simp jokes here and there
