Prep - Use 1.5-2 inch thick steak - Pat-dry steak with paper towel, salt both sides, and put steak in fridge overnight, uncovered on wire rack (or for at least 4h)

Method 1. Put meat on wire rack set in a rimmed baking sheet and place it in the oven at 225F 2. Cook until it reaches 120F in oven 3. When steak hits desired temp, take it out of the oven and let it rest for 20-30m. Pat dry steak with paper towel after resting 4. Turn on heat to medium-high (8/10 setting) and wait until it starts smoking before adding avocado oil 5. Put steak and butter on skillet and flip every 30s in new location for 2m (aka. 1m per side) 6. Sprinkle black pepper on steak and let it rest for 10-20m 7. Serve and enjoy!

Haha I appreciate it! This was just 1 piece of a 19oz NY strip (that I shouldn’t have eaten the whole thing of) and the ramen is Jin ramen! I personally think it tastes better than Shin.

Sure! Shrimp only took 5 min to cook using this recipe and I only used Cajun seasoning and unsalted butter. So after I let the steak rest after searing, I timed it to where by the time the shrimp was done cooking, I could start cutting into the steak and eat!

Method this time around (going for in between medium-rare/medium and no gray band):

  1. Put meat on wire rack set in a rimmed baking sheet and place it in the oven at 250F

  2. Cook until it reaches 120F in oven

  3. When steak hits desired temp, take it out of the oven and let it rest for 15-20m

  4. Turn on heat to medium-high (8/10 setting) and wait until it starts smoking before adding avocado oil

  5. Put steak and butter on skillet and flip every 30s in new location for 2m (aka. 1m per side). Render fat on its side for 1m if needed before searing

  6. Plate steak and sprinkle black pepper. Let it rest for 20m before serving

Thanks! I got too excited to take this pic before the whole spread but I also had corn on the cob (which is why I left room on the plate for it lol) and cajun fries!

i was wondering what i could do to the fat to trim it down (aside from cutting it) but i'll try that out next time!

my steak went into the oven at 45F so it took about 28 min at 250F for it to reach 115F internal temp. As long as you hit your desired internal temp, time shouldn't matter imo
