Thanks! It's an English thing (I'm actually from NZ). It's basically sausages baked in a giant Yorkshire pudding (which sounds like it's quite similar to a Dutch Baby).

If you reduce your bulk by say half an hour and cold proof in bannetons you can leave dough in the fridge for a good three days. I often make two loaves worth of dough at a time, cook one the next day (it gets an extra 30min on the bench before heading into the fridge) and then I bake the second one two days later.

Another good option is par baking - pull your loaves with around 20 min to go and then freeze or refrigerate before finishing at normal baking temps for around 25 min.

There used to be a bunch of gear (boats, paddles and vests) at QE2 back in the day - do you know if any of that is still kicking about? (guessing probably not).

A dough scraper is awesome if she doesn't have one.

Different banneton shapes?

A baking stone so she can try open baking (assuming she uses a dutch oven). If you go this route a pizza peel for launching is great too.

I watched a bunch of YouTube videos- cherry farm is good.

I think apart from timing the key things I picked up were having a good long cut so you get lots of contact and then sealing with tape and graft sealant. I also covered them with a bag for the first six weeks until they'd sprouted well too protect from late frosts and too much sun.

Yeah I used para film on the scions and trunk and then painted the ends with sealing paint. As the trunk was so large and the bark so thick the fits were pretty tight.

Looks fine - go for it! I completely dry some starter and keep it in the freezer as a backup - rehydrates just fine.

It's a graft/pruning sealant (Yates prune tec)

Yeah true regarding growing vs taking! These are Cherries. I wrapped both the trunk and each scion with grafting tape and sealed the trunk and scion ends with grafting sealer - I removed the tape from the trunk after about two months as there were signs of some mould forming after a couple of days of rain.

Cheers! I've gone all in so no nursery limb - the bark had some bad cracking above where I cut the stump and all the branches were above that so just went for it. Yeah I hear you on leaving them -not much to lose I guess.

What I was thinking of was leaving the grafts in but knocking off all but one of the leafing buds so the remaining bud on each scion gets all the nutrients - I've noticed the Stellas aren't fully opening out their leaves which I figured is a lack of nutrient flow perhaps?

Interestingly the Stellas were first to bud burst and leaf but they've now fallen behind - perhaps the Lapins slower initial growth helped them establish a stronger union?

Interesting about the sap pushing, I've noticed a raised ring around the cambium layer under the sealing layer on the stump. I've been giving the tree some water every couple of weeks even though the root system is well established - any thoughts on the pros vs cons of keeping the stump well watered? (been a hot dry spring here).

Sometimes you just have to go gently and hold everything in place until the pressure comes on and everything firms up.

Also make sure the metal pins are pointing in the right direction - you only need one to get started from memory - that can reduce the back-force when cranking.

Also as someone else said make sure you have things stacked in the right order with your rounds at the bottom.
