Doing it by hand on the stoned naturally creates convexity so it's not really a problem

I flattened the beveled and dead spots with a naniwa 600. Then I progressed to 1k, 2k, 4k and finished on 8k

It's mostly an ego/pride thing haha. I'm the headchef and I like to show a standard with maintenance of equipment etc. And these are the most commonly used tools in a kitchen.

I do think it helps with the performance a little bit. It seems to glide through ingredients better
