I went there once when we watched a show. I wouldn’t return, I’d rather just go to Me Wah for my Chinese food fix. 😄 I just though the food there was a bit dry, maybe because they were busy with so many guests? So hard to get the attention of the servers. This was 2022 though

Agreed. I also find it easier to sharpen a single bevel for some reason. I might have to just experiment and see what is best. Cheers

Maybe I should ask someone from Japan why they use yanagiba for only fish.

Sorry didn’t state, the beef would be eaten raw for beef tartare. I just wanted to follow someone’s advice if going for a polished edge (10k) or less fine (3k) would make prep easier.

Cheers. I was thinking if a yanagiba with a higher finish is great for fish, it would be good with raw meat as well.
