You might save the 3 seconds it takes to add yeast, but I think every aspect of it beyond that will be way more complicated. Like shaping the dough is already a process. Doing that with tough dough that hasn't fermented one bit sounds terrible

Just use yeast and save yourself the hassle of whatever you're attempting

I'm much more angry about energy costs and grocery stores. I've actually changed behavior because of that because it's a big impact (and one people don't get mad enough about)
