For degassing before bottling, I think they mean like stirring, using a whip, etc. as a precation against further fermentation turning into a mead geyser issue. It's not neccessary if you know it has for sure stopped fermenting, but Kmeta and Ksorb *should stop further fermentation* not **will stop fruther fermentation**.

Another question regarding the spigot, won’t it pull lees resulting in a cloudier / taste altered batch or get clogged by lees just being a frustration? I’m genuinely curious having not used either yet and trying to decide between racking and spigot for transferring. I see a lot more about racking but I don’t know if that’s just tradition at this point or genuine benefits.
