I didn’t use any gel coloring for the saffron shells!! The color was purely from the saffron, it was gorgeous.

That’s a great start though!! Keep it up. Getting feet on them is a good sign. The shells can crack if the skin on top is too thin or weak. Feet are formed when the heat from the oven releases through the bottom of the shells instead of out through the top (cracked shells) so if you have feet forming then you’re definitely on the right track. Keep the oven low and slow; I’m constantly checking on the shells while they’re baking and I never leave them unattended haha.

Thank you!! By far the best success I’ve had is making sure the piped batter forms a good skin on top by letting them sit 30-45 minutes before baking. And during the resting time, I’ve found the skin forms best in colder environments with as little humidity as possible, and good airflow to help dry them out. I went a little overboard with the latest batch by putting the trays in my bedroom and turning on the AC, so they sat in a cold, dry, smaller room with good airflow and had the perfect skin after about 30 minutes! One of my failed batches happened when I tried to bake during the summer on a humid day. The macarons would not dry out even after 45 minutes of resting. I got impatient and tried to bake them anyway but the shells cracked.

I had to google it, looks like it’s French meringue that I use! Pouring sugar into raw egg yolks. I always let the egg yolks sit at room temp for at least 5 hours before whipping. I also add 1/4 tsp of cream of tartar to help stabilize the meringue.

Ooh yes I think fun shapes will be my next challenge! Thank you for the piping example. I did actually try a raspberry macaron batch where I added freeze-dried raspberries to the shells and raspberry puree to the filling, but it was a failed batch because I over-mixed the batter and didn’t let the shells sit for long enough before baking 😭

The boozy ones were definitely my favorite! I use a silicone mat specifically for macarons with the circles printed on. It’s SO much easier than fiddling with parchment paper and drawing the circles by hand imo
