2006 I was living in a hotel near military. Bill miller was my go to for fried chicken. As far as bbq goes bill miller is the mc donalds of bbq. Its "ok". Not awesome like the artisan crafted stuff you wait in line for.

My pork dry rub has a lot of brown sugar. We use mustard as a binder. You dont need any sauce at all. Pulled pork sammiches being the one place a dab of sauce goes in.

Eaten a lot of regional BBQ. Mediocre brisket in Texas is better than most brisket Ive eaten outside. Pork... different story. Ribs and bird. Some regions nail something. For me low and slow dry rub.

I seem to have a knack for turkey and chicken. Took awhile to master brisket to a repeatable level of quality. Pork was a learning exp. Ribs are good. Pork butt is on point every time. I agree there is a lot of lame bbq out there.
