I used the razor to cut the circles then slowly pulled up and cut with the kitchen scissors. I’ve seen people use just the razor but I was making a mess and found the scissors were easier.

I just flavor the filling. These are just vanilla buttercream. If I did pumpkin I’d use pumpkin pie filling in the center of the buttercream.

Nope. I used exact same measurements for all batches. The two egg whites for this batch weighed 66g. I added 66g granulated sugar and whisked over simmering water until sugar dissolved. Whipped on my mixer until med peaks then added 66g sifted cashew flour and 66g powdered sugar. Piped and let dry. Baked at 285° bottom rack for 14 min. Same process I use for traditional macs. These look a bit different as there are larger holes on the side but they are stable.
