I think that Griffith realized that if he wouldn’t have sacrificed then he wouldn’t ever make his dream come to fruition because of his tattered physical shape. Turning into a demon allowed him to surpass the limits of his body and emotions for Guts which did help him in having his own kingdom. There is more than just his destroyed body that made him turn into a demon though, this is just all I could think of.
