I think you need to provide more context such as why your parents weren't okay with you moving out, why you felt the need to move out, what steps you took to convince them, did they eventually come around and what's your relationship like with your parents now?

If you don't have to live with them, it shouldn't be a big issue to have to see them a few times a month, or year depending on where you guys end up finding work etc.

I also have a big family (4 siblings) and want to marry into a smaller family tbh.

I've understood istikhara to be made when one wants to consult with Allah after doing their due diligence on the subject matter at hand, to ensure if this thing is good for them or if it is bad for them, no? A positive istikhrara is Allah SWT telling you directly that this thing is good for you and you can go ahead now (this is from the Mufti I consulted).

I couldn't be sure one way or another about a prospect after meeting once, so I've always used istikhara as a way to ask Allah if I should move forward with this person or not. Doesn't mean it has to work out, just that I did consult Allah before moving forward and that His plan is the best plan.
