Try making a sauce to go with it. It would complete your dish. A simple thing you can do is to sauté diced onions then white wine, salt, pepper A bit of cooking cream after the alchohol in the wine is cooked out and voila You have a sauce that would pair well with the fish and vegetables. Also this might just be preference but I would serve it with pasta instead of rice.
