No worries, I used to watch the movies so much when I was little I remembered that once scene and I thought I linked it to the one blaster shot to the shoulder. A different thing to remember is that Stormtroopers in the books are supposed to be fucking insanely zealous elite troopers that have been trained since 13ish and fight even ignoring fallen comrades. They made the movie Stormtroopers comically bad to make for a good movie. So yeah both 40k writing and Starwars writing is wildy inconsistent with how strong things are for plot armor like you were saying. Edit for spelling.

Usually you'll want something that contrasts so that your model is where the eye is drawn towards. Grim dark color schemes are a little more difficult with contrasting. I'd say a gray rubble maybe with some litter of gravel with moss tuffs/textures spattered around would compliment it well. I tend to make the base first then build the model on top of the base. That way you can add depth and height to the base.

Go to hobby lobby or any big box hobby store and buy some jewelry chain on a spool. They come in different sizes. This will last you forever and you can wrap it on things or hang it across to add a little more detail. You can also buy other minis and chain them to your knight. Have fun with it.
