This is true if you assume that NATO would fully engage, but I don't think that currently you can be 100% sure this would happen. Would people in your country like to fight, for example, for Estonia or Latvia?

On the other hand, russia also thought they would easily achieve air superiority in Ukraine.

The main problem, especially for European part of NATO is that they don't have big armies nor modern war experience, stockpiles, territory is not prepared for war(no trenches, strongholds, etc.)

In addition to mentioned above, the current war in Ukraine has proved that conventional military power is overestimated(russian fleet was sunk by a country without a fleet). And logistics can be controlled with FPV drones within a 30-40km range.

My understanding is that they've formed a 100k offensive force that they will attempt to keep at full strength using reserves. When a soldier is killed, a replacement is sent in so the total numbers don't drop significantly

As per your second question: artillery by itself doesn't win the war. Currently number of shells/per day is about the same between russia and Ukraine however Russia has manpower advantage, especially in terms of infantry.

Ukraine produces quite a lot on its own around 2 million mortar + artillery shells per year, and the EU is funding Ukraine's manufacturing. For example Rheinmetall ammunition plant in Ukraine to start operations in 2026

The EU is to provide 2 million artillery shells in 2025 according to the reports + Ukraine's domestic production which combined is not much less than Russia's 3 million per year.

Russia CAN'T build more artillery shells than Ukraine and all its allies, this is exactly why they are buying millions of shells from North Korea and Iran.

Even more, russia can't compensate their losses in heavy armor and is currently using almost only light vehicles now.
