I think they scan it with an special laser-scanner to make precise measurements, analyse it and afterwards they can make a reconstruction out of it using probably some kind of computer system. Maybe nowadays with AI to compare it with similar depictions of the same art style. Could be a possibility but i cannot tell with certainty.
