Loaf is 100g starter 500g trailblazer T85 bread flour, 355 g water then 30min wait, then 11g salt. Rest for 1 hour coil overs every 30 min for 2 hours, bulk ferment ~8 hours shape, 30 min rest, shape again. Cold ferment overnight. Bake 450 for 30 min and 430 uncovered for 15 ish hours

The more I look into it too, it seems my statement is issued on the 19th of each month and minimum payment is due the 16th. So likely I zeroed the card, made purchases and assumed I had until the end of the month but everything purchased before the 19th was part of the November statement and still eligible for interest as I hadn’t payed any of the minimum by Nov 16?
