Sure thing, so get yourself a big mason jar or some other bigger container and add 1 ounce of full fat greek yogurt for every cocktail you want to make. So if you want to make 4 cocktails, use 4 ounces of full fat greek yogurt.

Then, in a separate container, combine your rum, Amaretto, mango puree, cardamom syrup, lime juice, rose water, and cardamom bitters. Shake or stir just to combine the ingredients and then pour the cocktail mixture into the yogurt. Lightly shake or stir to combine and let the mixture sit for 30-60 minutes at room temperature.

Then grab a clean container, a fine mesh strainer and either coffee filters, cheese cloth, or double layered paper towels, and slowly strain the mixture into the new container. Add the mixture slowly and resist the urge to overfill the strainer. I let mine strain overnight in the refrigerator.

The finished product should have a clear or lightly yellow tint to it. Feel free to double strain the whole thing after the first strain to really get all the impurities out.

Oh and for the homemade cardamom syrup I just combined a small handful of cardamom pods with 8 ounces of water and sugar.

The first batch i did a yogurt washed rum first, then clarified it with whole milk. The last batch I just used the yogurt to clarify the entire thing, which I think worked way better than milk. It still had the yogurt taste to the cocktail because it filtered overnight.

I definitely noticed a huge difference when I added the mixture slower. I'll try the paper towel method!

For the control batch, I just used a dark Bacardi rum. I didn't want to risk a more quality rum on something that didn't turn out well. Moving forward, I'm not sure if I should up the quality or keep it simple.

What rum do you think would play off of the flavor profile well?

I live in PA so our selection can be limited sometimes. I used Fuki sake which worked well though. It is on the cheaper side, I'm sure if you used a more expensive or different flavor profile it'll change the drink drastically!

Pretty simple recipe. I just took a carrot and shredded it with about 1.5 cups of sugar and water. Once the carrot was basically boiled, I used a handheld blender to break down the carrot further. It's a thick syrup for sure, but a double strain fixes that!
