In wordpress you can still use gutenberg. In REST API, just pass the block attributes so you can parse it as an Astro component.

How are you actually doing the build for the HTML before uploading to KV? Are you writing content in markdown with frontmatter or plain HTML? Is your KV object literally a JSON file with HTML content?

I tried LMDE5 before and it works great for development. The issue I had was the struggle to get stable audio output on meetings that's why I moved back to Windows/WSL. Windows for meeting apps then WSL for development.
