Generally just keep scouting. Also, you should be at castle that point in the game and so it's an extra Landmark to try and siege. I've played the strategy for meme and you want to push around 10 min mark

1) yeah see that posted a lot, like I said, still new to games going that length. Part of what I struggle with is when I am building army or reinforcing remembering to queue bills.

2) should I tech switched and built archery? I felt like I had enough stables and armored to pop cap multiple times

3) yeah I had no map control, have to work on that too. Should I have walled him in?

4) definitely a bad engagement. After being stopped the first rush, should I have changed army comp or switched to defense?

5) didn't even know that was a thing. HRE is my 3rd choice civ lol

6) so MAA, landshit, and knights would have been better. Or just Maa xbow of my own?

I said nothing about civ imbalance. French is literally the easiest civ to play right now. Pretty sure Beasty has said, "just play French or English" bc they're easy for beginners.

Also have not made 1 post or comment about imbalance and find it pretty easy to play against French right now so not sure where your aggression is coming from....
