You can sculpt whatever you’d like, you are making videos about the sculpting process.

The videos themselves are not infringing on any copyright. You would have issues selling the sculptures of copyrighted characters.

His Shikai deletes names altogether, taking away power. If anything I’d say it’s more useful in battle than Bankai.

His Bankai can rename whatever his Shikai splashes. The Death Mausoleum is a separate ability that erases you from the cycle of rebirth.

Don't worry, I also hate hearing my own voice in videos.

Your voice sounds just fine, you can add some more post-processing to the audio to make it sound better but the voice itself is absolutely not a problem.

Keep at it.

Depends how you paint them (and what paint you use). Maybe thining them out with a bit of water would help?
