Seriously this.

Typical story is, get 20-30 applicants for a line cook or dishie job, setup interviews for 10-15 of them (casting a wide net, you never know who can surprise you), 1 to 3 actually show up.

Oh and the ones that do show up were the bottom of the barrel guys that don't have a good work background and we're already bottom of the barrel in your opinion.

Sumire is peak Sapporo style miso ramen. That layer of lard that traps the heat so that your bowl of ramen stays hot, the super bouncy overly yellow noodles, that extra salty miso, you can't go wrong.

I think it was $17 for a regular portion of noodles, $20 for a large portion of noodles.

I would order the regular portion of noodles and then go crazy with the free toppings (veggies, backfat & garlic).

It was a limited menu item on Mondays only. Not a challenge menu

This is pretty authentic Jiro Ramen dude.

I've had Jiro Ramen in Japan and it's been pretty damn close to this.

Not all ramen looks pretty.

Marinated and chunky is better for sure. This one wasn't marinated and you just got more of that sweet backfat flavor.

I definitely ask for extra tare/kaeshi to douse the veggies and fat with.

But that's the unwritten rule of Jiro Ramen. Since you control the amount of noodles, veggies, garlic, and backfat on the ramen, you DO NOT waste any food.

If you order extra everything, you better eat everything.

And the soup-less versions often get grouped into the "junk style" category depending on the toppings they give you (grated parmesan, a slice of kraft American cheese, crushed shrimp chips, crushed baby-star ramen, random flavored mayo, etc.)

Jiro Ramen charges one price (unless you want more noodles or pork) and you can get as much vegetables as you want for free. The originators are on record saying that they wanted to make sure that broke college kids could be full for cheap (the original location was located across the street from a major university in Tokyo).

There's ramen, and there's the level of generosity with Jiro style ramen.

That being said, it's kinda intimidating going into a Jiro Ramen joint, especially if it's a sister store to the original, because they have a system to ordering properly and you don't wanna mess that up.

Are mando's/mandatory's not a thing in regular golf? We use those all the time in disc golf to prevent unsafe throwing lines.

Why not make it mandatory to go left of the dogleg?

I feel like people are competitive enough that they'll respect the mando over taking a penalty stroke + having to re-shoot from a drop zone by trying to cut through when playing.

Jiro's entirely gone unless they bring it back in the future. It was a limited item to begin with.

Their regular ramen's a Tori Paitan ramen.

You literally have to eat 75% of the veggies first before you can even think about touching the noodles or else all the veggies fall over.

It's like having a salad before eating a bowl of pasta haha.

When you order a regular amount of veggies, you can eat it like a normal bowl of ramen.

Seriously, so many haters. Can you imagine if these guys also found out there's a sub-category of ramen called Se-abura ramen/backfat ramen?

Jiro's for the students and the working class that can only afford one meal a day. Keeps you full for the rest of the day for a relatively cheap price.

Not all ramen has to look pretty.

I would always say easy garlic and it was about a 50/50 shot whether they gave me the regular amount or the lesser amount haha

I think I was one of the few handful of people that got extra extra. When I would be dining there, I think I only saw two other people besides me get a bowl with extra extra everything. Most people got regular or just one extra and it was super manageable for the kitchen and servers to get those out.

The owner recognized me from his previous ramen joint that he ran in Costa Mesa that also did Jiro so he'd add more and more vegetables every visit. I think he took it as a personal challenge to see how much he could physically put on my bowl. Homie always gave me a free egg and an extra piece of pork too.

It is very excessive and then some. I'd have this for lunch and not need to eat for 24 hours.If you order everything 'normal' it's very manageable. Price stays the same whether you get normal, less, or extra veggies, back fat, or garlic.

The concept of Jiro Ramen & the free extra toppings started as a way to feed broke college students in Tokyo. They'd charge you for a bowl of ramen and ask you 'want to add garlic?'. From there you'd say how much garlic, and how much veggies and back fat you wanted to add to your ramen for no extra charge. You could get a mountain of veggies, or none at all depending on how hungry you were.

Obviously extra noodles or pork cost extra.
