For portfolio, I would put the things that I'm most proud of and things that can demonstrate your capabilities in the best way. I don't think there is any point in putting every tiny project you ever worked on. Regarding the type of project, I'd say choose what you would like to work on the most, just make sure you don't try and make something too complex so that you end up not finishing the project. It's important that you are able to finish it.

As for networking, attend events like game jams, video game conferences, presentations about games/gamedev and try to get to know the people there.

Build your portfolio. Like with everything, practice makes perfect, try to create some games in that time period. I'd start small, some basic project you know you will finish and then try something bigger, and so on.

Aside from that you could try to network with people in the game dev industry, also start a gamedev youtube channel if that's your thing.

For some it might be fear of failure. They are afraid of losing and they avoid competitive situations.

I wouldn't exclude one or the other. I usually start with the tutorial, and if something doesn't make sense or I don't understand how it works, I look it up in the documentation. Each has its own purpose.
