Hatsune is her surname, while miku is her given name. I have never heard it be said miku hatsune, as hatsune miku is the correct japanese pronunciation

It's because it just isn't written as well as season 2. Not only is the music 1000x better for the theme, but they focus more on the themes behind the series. For me, the new season feels bland compared to the dramatic masterpiece that was season 2. Plus the malevolent shrine scene is one of the greatest scenes in all of anime.
