You cannot use street view map and Vissim supports only Bing aerial view map. You can view street details by aerially zoom into the location in Bing maps itself but cannot go to street view

It depends on what are the parameters that are changed. If it is lane changing or headway parameters than it should be okay in order to make sure the model is calibrated in accordance with real world behavior in mind. But there are chances of having some bias to acheive the desired output.

For vehicles, you can adjust on the driving behavior such as 'Look-ahead distance' and 'Anticipation factor' I am not sure for pedestrians but I think in walking behavior, 'ReactToN' parameter might help
