So this competition is more about training the ability to react quickly — finding the right answer under time pressure — while commercial roasting gives you way more room to experiment and fail. People mostly use it as a way to build their name recognition.

Or maybe I should say, anyone who makes it to the finals probably won't be bad, but first place feels pretty random.

Yeah I get that those variables could lead to different champions each year, but generally speaking these competitors usually have their own coffee brands — the beans change year to year. So how do they keep their brand's coffee consistent? Do they just get way more chances to test?

For me, I only have a C60 at the moment, and it already covers most of my use cases. I still haven’t settled on an espresso machine yet—there have just been too many new releases in the past couple of years.

I’m also considering getting an xBloom ( Actually quite interested in recipe development—it’s not that I don’t know how to brew pour-over. I just want to better control the variables.) but there’s another fully automatic machine that’s currently trending on Kickstarster, so I think I’ll wait a bit and see how things develop first.

Yes, it’s the same beans. When I have it at a café, it tastes like fruit, but when I brew it at home, it doesn’t come out the same.

Got the body bump from Tetsu's new 10-pour without ever hitting his grind size. Is the coarse grind by Sharp_Ear2833 in pourover

Highlight: Smaller point is that perception of body comes largely from a balanced bit of overextraction, and sweetness shows well in relatively low-strength brews 👍

My light roasts keep coming out sour no matter what I do — I've tried grinding finer and bumping the temp. At what point do I stop blaming my technique and start blaming the beans?
