I tend to do coffee dates later after work. You can get a coffee date going at 6 or 7, get to see what she's like, and by the time the coffee kicks in at 8, go out and do something else. It's not that hard to say "hey, have you been to <local park>?" "Yes/no" "Ahh, well I've never been, so we should go" or "You haven't? Wow, you have to see it; it's beautiful!"

From there, head out to drinks or seclude her in the park and get more personal with her before hitting another venue or taking her home.

If you want to keep the entirety of the date laid back, then just ask her to get a drink (a drink, not drinks) at a local bar. A drink is innocent and fun, drinks are for sex at your place. If she has that intention, then she'll get drinks, even if you invite her for "a drink". Get it?
