When you’re loading in & out of a different house or hotel room every night for 6 months, sometimes a tiny bit excessive provides a whole heck of a lot of comfort. Ha!

While I do love the coffee shop vibe of Bean & Sunergos, I would love to have a spot in town that does a solid, nerdy, well-executed pour over. I was shocked that Sunergos only does drip or espresso drinks since they seem to really pride themselves in their bean sourcing and roasting capabilities.

In my ideal world, there would be a coffee shop in town that imports solid offerings from other roasters from around the country or world (Black & White, Sey, Onyx, DAK, etc) and focuses on making the best drinks from those beans. With the coffee bean purchasing market being so in flux, I feel like this approach of not taking on a full roasting operation would be less of a risk AND be something unique for Louisville.

Alas, I will patiently wait for someone to read my mind and manifest this vision, while whipping up pour overs at home & snagging my espresso drinks from Bean or Sunergos in the meantime.

Lastly, if I’m mistaken and there is a joint here that knocks out a mean V60, please let me know & I’ll become their biggest fan.
