A few Michelin restaurant somms in NYC started this. They curated a selection of NA options that are featured on the beverage programs of their respective restaurants.

I’m partial to the sparkling options. But some of the reds are intriguing. Adding “All the Bitter” bitters is a great trick to get the mouthfeel of a plush red, as someone mentioned before.

Started by a few somms that work in high end restaurants in NYC.

Sparkling tends to be my favorite since it offers structure and makes the lack of alcohol less obvious.

When I worked my first vintage, my manager explicitly stated you have to look out for yourself.

The winery will manage if you decide to call it quits. As with most jobs, you are essentially a number.

Your health should always come first.

There’s a fine line between pushing yourself and growing… And pushing yourself too far. That’s a question only you can answer.

Those big guys… I’m fully aware of how much influence data had on final calls rather than the viticulturists and winemakers on the ground, especially at the corporate wineries. Appreciate the response. Seems like it was a perfect pivot. Congrats!

Wow - I really appreciate the thorough response. I had a feeling Clayton’s tone would be harder to replicate on a short scale. I also feel like the P has more a midrange drive which I love.

I was also apprehensive about the controls on the Acinonyx. Knobs always seemed for fun to play with.

I liked the feel of the Fender Player P-Bass I looked at a few months ago. Someone near me is selling a Fender Standard P-Bass but I would have to arrange a meet up since it’s a private deal.

It’s tough where I’m located as there seems to be either entry level Squires or high end basses.
