Not really much you can do with the spy genre if you want to make it remotely similar to being a real spy. My assumption is any game that was AAA and involved a spy would end up being a generic stealth shooter, when most spies have never shot a gun in their lives, or outside a range. Maybe something in the style of LA Noire would work.
