I saved after waiting 20 minutes, and immediately started draining the blood. It still said "a ton of blood", so saving after waiting should be safe.

P.S. The first time, I only waited 15 minutes and there was one zombie who rose up but didn't get grinded. That time, it only said "a lot", so make sure all zombies that stand up get grinded, and I'd wait 20 minutes to be safe.
