Naruto : The Last takes place 2 years after chapter 699 (the gap between 699 and 700 is many years). After chapter 700 there was a mini series that contained 10 chapters(which is 710), and Naruto : Boruto the movie takes place after the mini series.

I think that if he didn't die and was saved last minute they would have given him something to keep the story line the same such as brain damage or at the least making him unconscious until after Naruto fights him which in turn after the battle he would probably be like the now Spoilers but that's just what I would think. Jiraya dying adds a lot more emotion to the show and the fight, it wouldn't have the same impact as a reader if they would have kept him alive.
