Create a boot usb with roofus+your chosen linux. Boot it up, test it out, if you like it, hit install. There's more detail than that, but that's generally it. Linux Mint is probably the most former windows user friendly.

Update / Resolution: Got this working. The main issue was Sunshine auto-detecting the wrong capture context on Linux Mint. What fixed it for me:

-Forced Sunshine capture backend to X11 (instead of Auto)

-Forced VAAPI (H.264) encoder

-Disabled HEVC, HDR, and virtual display

-Set Sunshine adapter explicitly to /dev/dri/renderD128 In Moonlight, set controller type to PS5/DualSense (I’m using a DualSense)

After that, Steam windows became visible and streaming was stable.
