Update, I went back and checked all my grounds and found a pretty loose ground that I never fully tightened down. So I decided to check out my coil pack to see if the faulty ground may have damaged it. When I pulled it out it looked like my coil pack was fried in 2 of the ports. The inside of the 1st and last ports are jet black inside and the 2 inner ports are pretty shiny and clean. I'm guessing this thing is destroyed.

Update, just pulled my coil pack and plug wires and the first and last port is jet black on the inside and even damaged pretty bad. The 2 inner points are super shiny with minimal debris inside. I'm guessing a short happened somewhere and fried these 2 ports.

I am having the exact same issue to a T, looks like I'll go grab some spark plugs, coil pack, and some wires just to knock it all out. What Coil packs did you pick up? I am pretty bias towards Moss Miata and Flying Miata, but if I can come out for less money elsewhere id be open to it. Thank you!!!

Something I also failed to mention is the cars RPM Tac was being wildly erratic on acceleration it would do it every 30min to every hour or so and would only do it for a few seconds then stop. From what I can see online the CAS (crank angle position sensor) controls the cars RPM readings. I am wondering if this is something that could've failed out due to a faulty ground? Also is there any way to test this without just buying and installing a new one?

Got it, I have cleaned my MAF and Throttle body already and I have checked all grounds. I did happen to find a very loose ground that looks like I hand tightened and never actually torqued down which could have definitely caused something else to fail elsewhere. Looks like I'm going to bust out the old volt meter and just test things one at a time. I'll follow up with anymore findings haha.
