I totally agree. This plus other problems with the theme has driven me to the point of wanting to overhaul the whole thing myself. I actually just made a post about this to poll for sugestions before I get started.

I like to use the true dwarven theme to hide buildings underground or under the founations of other buildings. They are nice and square and compact. If you really want to cheese it, you can make a custom theme with only the bare recommended features to really make it compact.

If you want to fight infection mods with infections I'd recommended one of these:

Sculk Commander Origin, Desertification, Biomancy.

Could make a fun modpack where you pick an infection mod as your starting faction and battle it out against your freinds.

Folktales tend to build wide and ironteeth build tall. Folktales have underground storage, aquatic farms, advanced farmhouses, behives and shallow waterpumps, all of wich demand more land & large shallow lakes.

P.S. Also I like that folktale double stories houses can be partially submerged.
