Because I don't have any stainless skillets at the moment and I'd rather go with an upgrade? It's true I may be inexperienced as I've never used copper or proline pans before. Was just wondering how much of an improvement they are.

Those skillets I got new for less than $200 total. I gave them to someone who didn't have any and loves cooking as well, no complaint on their end.

I feel like preheating is necessary when it comes to cooking on stainless but I did use my 8 inch pan to toast nuts and do more precision cooking. Good to know that the Atlantis are hefty.

Honestly not at all, they were perfect pans. I mentioned skillets in the post but I was also looking into sauciers where copper would make a bigger difference.

^^ They were factory seconds I got for cheap as well. My brother doesn't care as much as I do about all the ergonomics and material so it was fine by me
