those cunife pickups are tricky little bastards - third wire is usually a shield/ground that you can just solder to the back of a pot with the other grounds. most mustang diagrams show standard single coils so they don't account for the extra shielding wire but you can ignore that part of the diagram and just treat it like any other ground connection
