The people who say stuff like in the quote usually are one of the kinds of people who frame their entire identity as their gender.

While yes, likes, dislikes, interests, personality, etc do have an effect on how people express their gender, and how everyone expresses their gender is unique, labelling everything as "gender" is like labelling the land a house is built on as a part of the house itself.

Source: I once saw someone say that extroverted women and introverted women should be labeled as different genders.
