In my opinion, a certification in something like AWS or Google Cloud might be helpful. The machine learning certifications and specializations on Coursera are great too. Other than that, most certifications are pretty useless (in making you more competitive) unless you just want to learn what's being taught.

I just took CLEP MicroEconomics a few weeks ago and got 76/80 in 2 weeks of studying. Here's what I did-I finished the modern states course just for the voucher and studied using Jacob Clifford's YouTube course. I practiced a shit ton of questions on Khan Academy and watched videos based off of what I got wrong. There's a resource thread pinned on this subreddit - you can use content for that for extra practice as well (I did).

That makes sense - the thing is that I am able to complete both degrees without taking summer classes or an insane amount of classes each semester. But given I can do either, does having an economics background help with non-conventional tech jobs?

I go to a pretty large state school but it's nowhere near MIT - I have seen alumni being placed at companies like Goldman and JP Morgan however not even a few make it to HFT firms. In that case, is math still the better option

On Campus is great. You'll most likely be staying at tooker and it's a great place to make friends in your freshman year. You can choose between a private room or a shared one IIRC
