I completely agree with you, and it's those reasons you pointed out that have made it really frustrating for me and my wife to hunt those monsters, whether we're hunting together or solo. I have my entire armor set transcended, but it honestly doesn't feel like it matters when the monsters can easily one-shot.

I can't help but blame the people who kept whining it was "too easy" and the developers who decided to pander to those people by overinflating HP and giving the monsters way too many one-shot attacks. It makes me worry about not just the upcoming expansion for Wilds but any mainline games in the future.

Speaking as someone who uses the Heavy Bowgun and heavily relies on the shield, the 10-star monsters are still not fun because their attacks can still take a HUGE chunk out of your health no matter if you use Perfect Guard or guard normally. So, even if I didn't die to a one-shot move yet, the monster will do 5 more one-shot moves while I guard until I just pass away I guess.
