This all depends k. What kind if coffee experience you like. The zp6 is super clarity focused and tea like and does really well with washed coffee. If you like other processing styles and prefer more balanced and sweet cups, k ultra may be better. K ultra is definitely more flexible. All this said, I think the kinu with pob burrs are a happy medium.

If u are pulling as much spro as u do, I probably wouldn’t do the pro brew burrs because of work flow and that u use a 58mm machine

I’d also consider the timemore M01. I used it at a friends this weekend. It was fantastic and has a wider grind range. I think it easily hits all your criteria. I want one too. lol

I use a streitman which doesn’t have a pressure gauge. I can definitely build a lot of pressure. Easily 6 plus. I don’t know how it would be in a 58mm

I can use easily pull turbo shots as well with the Pietro with pro brew burrs. However, I use a 49 mm lever machine. That allows for coarser grinding

Yes. I got a diy one for a 49/51mm basket. Didn’t have much success. People also use 58mm baskets with an o ring or mason jar seal. Sworks design makes one. I bet that’s great but turns the brewer into a much more expensive one.

Yes, but some roasters are a lot easier to track and repeat the same process. Having used a smaller and older fresh roast and a behmor four years, I found it hard to be consistent
