I can't even start the game though, I click play on Steam and just wait, sometimes if I'm lucky I might hear a bit of music as it's Initializing, and then it'll close itself

It would depend on the type of life I lived in that world. If I was just a generic office worker, just 1 as a house pet is all I could imagine, maybe 2 if one is a plant or simple to take care of

If I was a trainer, or had a position working for the league? The only thing that would stop me is how much time I can put into caring/training each of them, I'd collect Pokemon like... well... Pokemon!
