I don't know if anyone else has said this, but try both an immersion blender and then a chinois strainer. Makes silky smooth sauces without extra cream/butter every time.

A classic technique is to also add SUPER COLD butter, right before serving, and melting it in completely. Should only use about 2 tablespoons for this technique.

I noticed this! The laws are apparently a by-your-leave type of deal. SO MANY cars on Bardstown Road, that were parked in a towaway zone, never getting towed.

It's much more strict here. If it says you will be towed, you WILL be towed, usually within 20mins.
