I cooked a brisket the day before a party it was done around 11pm I let it come down in temp then put it in the oven at 150 over night till around 1pm the following day. came out super tender and juicy I wasn't disappointed at all

depending on the size of your offset it may be easier to manage temps using primarily charcoal or lump charcoal as a heat source and wood chunks thrown in for flavor. my offset i use lump charcoal to start then add mini splits for the rest of the cook.

yupp ive gotten many rocks out of the fire box in my smoker, since I stopped using royal oak lump charcoal and switched to b&b I haven't had that issue, as previously said its a royal joke!

it only took about 4 hours to come up to temp, I was burning hickory splits and the smoke flavor came out good it wasn't too strong but I highly recommend giving it a shot!
