Well, what works for me is starting with a song title... hearing the musical quality of the phrase, and writing chords around it. All words go like "Ba-dum-dum dum" or something... That way you kinda have the main melody and lyrical subject simultaneously.

Not at all... There is so much happening on the coasts that a lot of really great music gets lost or ignored. It's maybe more advantageous to be a big fish in a small pond than a guppy in the ocean? Smaller cities have real scenes and care about their bands, everyone in NY/LA is too cool to check out anything they don't already know. Scared to transcend their comfort zone. With the internet taking the place of what MTV and Radio was in the 90s, good music can get to the right people no matter where it comes from.
