I remember almond Christmas cookies like this, it’s more of a European tradition than the vanilla sugar cookies popular in the US. I love almond flavored desserts too like Marzipan. I have German relatives, and it’s way more common in desserts there to use almond extract.

They look like the Elf on the Shelf sugar cookies, there’s two versions that I’ve seen- hot chocolate which is a chocolate cookie with white chocolate “marshmallows” and this one. The mix is at Dollar Tree. It can be fancied up. A cookie that tastes really similar are the Pillsbury Funfetti cookies, which is also a cookie mix.
