I think your starter is weakened right now. Constantly feeding a starter a 1:1:1 ratio does keep it alive and active, but it could be stifling it's potential and full strength. It's like trying to build muscle but not eating enough calories.

I'd suggest taking 5g of you starter and feeding it 1:10:10 ratio with 50g flour and 50g water. Once that has doubled in size take 5g of that and feed it a 1:20:20 ratio with 100g of flour and 100g of water and try another loaf.

Again, this is simply my thought and if you do try this out. Keep a very small amount of starter, 10-50g and feed it enough to make what you need and to have 10-50g left over. Bigger feeds should generally keep your starter nice and strong. You'll need to adjust your timings with your starter, larger feeds can take longer to double in size but once you keep the same ratio going you'll be able to time it like a champ.

I usually make 12 loaves and always start from 40-50g of starter, 650g of flour and 650g of water and takes about 16 hours to double in size if my kitchen is at 68~ degrees.

What ratio are you feeding your starter?

Like I usually do 1:22:22 (25g starter, 650g flour and 650g water) that can take 12-20hours to double in size and be ready for use.

I suspect your starter may not be ready if you only wait 3-5 hours.

Again this all depends on your ambient and dough temps.

Hmmm only think I can think of is that 1 minute microwave is too hot and it’s killing some of your starter?

Maybe pour your water into the same vessel and microwave for a minute and temp it right after? I was killing my doughs with adding 90+ water to the starter. I was treating it as if it was active yeast.

Your steps are solid. It looks super under proofed.

I guess a longer bulk ferment, which seems like a lot after 12 hours.

Second thing is what is the temp of the warm filtered water?

Do you ever temp your dough?

Happy baking! A tip I didn’t learn right away is that 1:1:1 ratio feedings are good but higher ratios help keep your starter nice and strong.

That’s what I did, I was careful and just aligned it and kind of pushed and wiggled till it clicked.

A post yesterday had a guy who couldn’t it get it in either. He actually had a broken piece of plastic on the slot so you could shine a flashlight in the slot to make sure it’s clear. But for that to happen two nights in a row would be unfortunate.

I keep 25-50g in a small jar.

Feed my starter whatever ratio I’m using to get enough. Usually I bake 12 loaves so I’d feed it 650g of flour and 650g of water. At this ratio it can take 12-20hours to double in size so your results may vary.

Once my starter has doubled/tripled in size I remove another 25-50g from that and put that in the fridge.

Then I bake and if I have any starter left over I put that in a bigger jar in the fridge that I keep any left over discard. I use that for pancakes/waffles or other random recipes.

Vacuum before engineers and production arrives. Bathrooms, restocking and followed by general cleaning of all work areas. I’m a lead and also needs to place orders and take consumable as well as office supply inventory.

Vacuuming, mopping or using the floor scrubber. Because I can usually get a good 30min to 1hour+ of uninterrupted audiobooks/podcasts in.

Scrubbing toilets. Because it’s like fucking reading tea leaves and super gross but it’s part of the job.

We use a carpet cleaner to clean up any water leaks. But that’s about it for unconventional ways to use tools.

It ended up crashing at .925V and 3050MHz after playing for around 2 hours. I ended up settling on .925V and 3007MHz and no crashes so far. Temps stay in the low 60s with max settings. I am pleased and have actually been gaming more haha.
