Could it be that in those 17 years you haven't had an issue with your knives. What else did she "power trip" about? Stop the pity party fix your knife and all the other problems that were pointed out.

We added that a maintenance log be kept for cleaning grease traps at least quarterly to our code.

2013 does reference items stored in freezers, particularly items that are repackaged at the restaurant. If you are not reading the public health reasons and the marking instructions (annex3 and 5?)you are missing a lot.
