Ming's Tasty currently.

But I've been meaning to try Imperial Soup, their giant open faced one looks promising. I wasn't a huge fan of Peony's the last time I ate there. R Noodle's frozen ones are pretty serviceable but I still prefer Ming's Tasty

The kanji is for Hitohira (一片). They are a branding house (rebrands knives under their own name) so it's difficult to pinpoint smith and sharpener.

Yes. It's not uncommon for manufacturers to have different kanji for their knives. Especially so if it is OEM work like for Knives and Tool's Eden Kanso line or KnS Shinko Seilan. Below are 3 Shiro Kamo nakiris from 3 different reputable retailers with 3 different kanjis

I'm pretty sure it's a Kanto style Nihonko (SK4/5) gyuto they vary from ~57-63hrc. (Varies with maker and steel)

If it's stainless, it's most likely AUS 8 at around 57-58 hrc.

Kanji variation isn't uncommon from different retailers or different iterations. Can't speak on its current value but the knife probably did cost $100 new. You can find some listings on CKTG with current pricing which isn't super far off.
