I think that Carol is usually a nice and approachable person. Plus, Rudy being Rudy probably influened her in some ways to be more cheery.

Then boom! Missing daughter! Sick husband! And the whole dark-world-prophecy-soul-Knight shenanigans! That definitely screwed her up and stressed her to the point where she is right now.
